Did you know that the Dutch Food Circle is working towards zero waste of fruits and vegetables? Our latest infographic teaches you all about it!
The Food Circle applies mild processing technologies to ensure 100% usage of fruit and vegetables. That means, every piece of a fruit or vegetable is used entirely, from tip to base. For example, when producing carrot juice, the tip and base of a carrot are often thrown away. Instead, these so-called side streams can be mildly processed into other valuable ingredients or products, like fibres, soups, or grated carrots. To gain the most value out of the side streams, the Food Circle is developing a tool called the Procestimator. This intelligent tool will calculate exactly how a side stream should be processed to maintain optimal nutritional value, produce high-quality foods, and achieve zero food waste!
